My Favorite Healthy Recipes

For this week’s Get Fit Thursday (in Collab with Sarah from Coffee and Glitter and Taylor from The Morrell Tale) we are sharing our own healthy recipes! I absolutely love finding new healthy meals to prepare and I love creating some of my own. It’s so fun to experiment with food and find your favorite go to meals.

Breakfast:

  • Egg white vegetable omelet
    • Egg Whites (I get them in a pack from Costco)
    • Veggies (I used spinach, kale, and mushrooms)
    • Cheese *Optional (I love cheese on everything especially omelets. I used mozzarella)
    • Avocado Oil for the pan

I love this recipe for my weekends to make for me and my fiancé. It fills me up and honestly makes me feel healthy. It’s so delicious and I love knowing that I am feeding my body with great nutrients.

Salmon Cakes with Zucchini and Homemade Fries

  • Skinless boneless Salmon in a can
  • Mayo
  • Ketchup
  • Egg
  • Onions (optional)
  • Breadcrumbs or flour (I prefer breadcrumbs)
  • Seasoning (I use Old Bay)
    • Mix all the ingredients The mixture should end up looking like tuna. Mash it in to look like a patty and stick on the grill or a frying pan
  • For the fries:
    • Chop up organic potatoes, coat them in avocado oil (much healthier alternative to olive or canola oil) and sprinkle your desired seasoning. (I use pink salt and Old Bay)
  • For the zucchini
    • Chop it up in small slices, stick it in the frying pan with avocado oil and splash a dash (or more lol) of minced garlic.
